With the fall weather arriving, I always get excited about eating winter food. I tend to quit grilling as much and smoke some meat or make more meals inside. This weekend, I smoked a brisket, and it reminded me of my smoked turkey experiences. I try to do about 2 or 3 a year, and I've been keeping track of what works for me. When I get the brisket figured out a bit better, I'll write up something on that, too.
